Lemon Sugar Shortbread
What a wonderful way of infusing lemon scent in a simple shortbread recipe that uses just five ingredients! This Lemon Sugar Shortbread recipe is so much better than the store bought shortbread because it has a softer almost velvety texture that will just crumble in your mouth. The lemon scented sugar beautifully blends with other ingredients and baked until tender. The result will remind you of the good old fancy style dessert. This recipe is unique because it is no regular shortbread recipe. There is a good reason why the recipe calls for lemon zest instead of lemon juice. That’s because the lemon zest is a lot stronger than the juice and will produce excellent lemon flavor. Use a zester to achieve a finely chopped lemon zest or the small side of a grater and then chop it up, so you have little pieces of zest. Make sure to leave out the white part while grating the zest since its bitter. You can make these bite-sized beauties for tea time or brunch, picnics, potluck, or also eat a piece or two with your morning coffee as well.
